Brain — vs. — half-and-half (mix of cream and milk)
78% water — 79% water
12% lipids — 12% lipids
1% carbs — 4% carbs
8% proteins — 3% proteins

As for brain:
Mean free path: ~100 microns
Anisotropy factor: ~0.9 (drops lower at wavelengths > 800 nm)
Transport mean free path: ~1 mm
I don’t have notes on how this compares to half-and-half.
